My compliments to you on highlighting local cheesecakes (and other goodies)! Who needs another chain restaurant?

It's not a bakery, but Kitty Hoynes has some of the best cheesecake I've ever had after a great meal. (And if you're too full for dessert, get it to go!)

Ah, the wonderful Tailor and the Cook in Utica makes fantastic cheesecake. And the use cream cheese made right here in Herkimer County as well.
